Pollack are a great fighting fish, there's plenty around and their good to eat - the best thing is their pretty straight forward to catch too!
From the shore
I find from the shore or rocks you will only occasionally catch them on a plug - I think this is because most Pollack from UK beaches and rock marks are not that big. Most of the time I find they really come on the feed about dusk and then on into darkness even. I usually find bright spinners (florescent Red, Pink & Yellow, not to dissimilar to Wrasse type spinners) work best - jigging them or using a sink-and-drop method works well - feathers work well too.

If you want to catch big Pollack then I would recommend wreck fishing. Double figure fish are not unusual from a wreck. Jelly eels, RedGills and Pirks often work best on a drift.
